Featured Brewing System:
PETER AUSTIN 7 BARREL DIRECT FIRED SYSTEM

This is a traditional direct fired English-ale type brewery. Time tested and it has made plenty of good beer in its day. It is "Old School" in design, with open-top fermenters and Grundy type serving/conditioning tanks. Peter Austin systems were quite popular in the New England area of the the US during the early growth era of the craft brewing industry, and that's where this one did service. It began service about 1994 and was removed in late 2011.

Mashing is simple infusion, with a stainless steel mash /lauter tun (wood clad in the traditional British style) with perforated false bottom plates. The brewkettle has a solid copper conical top over a stainless steel shell. Like all Peter Austin systems, the side of the kettle was clad in a brick surround. The bricks from this system were salvaged and are included and could be re-used. Other options include adding insulation and stainless or copper sidewall cladding.

This is an simple, economical option for a start-up brewpub on a modest budget. While more labor-intensive than most recent systems built with unitank fermenters, it made good beer for many years and has plenty of life left in it.
